CABBAGE
SURPRISE
3 c. chopped cabbage
8 oz. ground chuck (raw)
1 tbsp. chopped onion
5 oz. tomato juice
Salt & pepper to taste
Broil cabbage until tender, drain liquid and save.
Cook beef in Pam sprayed skillet, drain.
Drain meat on paper towels.
Combine ingredients and cook on
low heat for 30 to 35 minutes.
If more soup is desired, add liquid from cabbage.
DIABETIC RECIPE - 756
CABBAGE
WITH
TOMATOES
2 med. onions, sliced
Artificial sweetener to equal 1 tbsp. sugar
1 med. cabbage, shredded
1 tsp. salt
1/2 tsp. caraway seeds
1 to 2 tbsp. vinegar
1/2 c. water
3 lg. tomatoes, peeled and chopped
1 tbsp. flour
Bouillon
In deep saucepan, saute' onions in small amount of bouillon.
Saute' until
soft and golden.
Sprinkle with sugar.
Add cabbage, salt, caraway, vinegar, and water.
Simmer, covered, over low heat for 30 minutes.
Add tomatoes and simmer, covered for 15 minutes more.
Mix flour with 2 to 3 tablespoons of pan liquid.
Make a smooth paste.
Stir into cabbage.
Cook, uncovered, stirring constantly until mixture thickens.
DIABETIC RECIPE - 757
CARROT
AND
ORANGE
SALAD
1 1/2 c. water
4 oz. grated raw carrots
4 oz. unsweetened orange juice
1 tbsp. unflavored gelatin
1 tbsp. lemon juice
Artificial sweetener equal to 2 tsp. sugar
1/4 tsp. salt
Lettuce leaves
Soften gelatin in 1/4 cup cold water.
Add salt, sweetener, and 1 1/4 cups hot water.
Stir until dissolved.
Add orange and lemon juice.
Set aside to stiffen slightly.
Add raw carrots to gelatin and pour into mold.
Make sure mold has
been rinsed in cold water.
Chill.
Unmold on lettuce leaves.
