DIABETIC RECIPE - 812   SHEPHERD'S PIE

 

6 oz. cooked roast beef, cubed

Butter salt

Pepper

1 tbsp. dehydrated onion

2 beef bouillon cubes

3 to 4 oz. mashed cauliflower

 

Dissolve bouillon in enough water to make a gravy. Put all in a small baking dish, cover with cauliflower.               Bake at 350 degrees.   Bake until thoroughly

heated and cauliflower is browned.

 

 

 

DIABETIC RECIPE - 813   SKILLET     EGGS

 

1/4 c. tomato juice

1/8 tsp. pepper

2 eggs

1/4 tsp. salt

1/4 tsp. parsley flakes

 

In skillet, combine all ingredients except eggs.   Stir over moderate heat until mixture comes to a boil.                 Add eggs, one at a time.   Cook over moderate heat basting with tomato juice.                Baste until eggs are set.   About 4 minutes.

 

 

 

DIABETIC RECIPE - 814   SLUSHY

 

1 can sugarfree ginger ale

1/4 c. unsweetened pineapple juice

ice cubes


Blend until slushy.   May add rum extract.

 

 

 

DIABETIC RECIPE - 815   SOUTHERN    CELERY       FISH   SALAD

 

6 c. thinly sliced celery

1/2 c. sliced med. onion

1/2 c. diet mayonnaise

1 tsp. salt

1/4 tsp. pepper

2 lbs. fillet of sole or flounder,

cooked, chunked, and chilled

1 1/2 c. orange sections

 

Combine all ingredients except fish and orange.   Mix well.   Add fish and

orange, toss lightly.   Serve on lettuce leaves.   Garnish with tomato wedges and
